The six tastes of Japanese dinners

Every good Japanese home chef includes six tastes into every meal for balance including bitter; sweet; sour; hot; salty and mild. This will usually mean there is a dish with one or more of these flavors in the meal. What are some of your favorite bitter, sour, sweet, hot salty or mild Japanese dishes?

Though some dishes such as soups might feature multiple tastes depending on ingredients.
